Congratulations on your recent conversion. I hope you enjoy the experience.

There are many ways of getting your protien. From the sound of your post, I think you know that a healthy and varied diet will get you all the protein you need. Meat eaters tend to get way too much protein.

Tofu, seitan, tempeh, nut butters of all kinds, grains, Dr. Bronner's protein something or other, Bragg's liquid aminos, protein powders, any soy product....it's a long and tasty list. The trick is learning how you like these different foods. For example, I absolutely love cooking my tofu in Bragg's. I crumble the tofu and put it on top of veggie jasmine rice with a little sesame oil. Also, if you're into the Atkins diet stuff, his line of products is high in protein and low in carbs.

I hope this helps! Also, health food and natural food stores and whole food stores are great places for this kind of info. I've gotten some of my tastiest ideas from other veggies working at these places.
