Ingredients:
1 2/3 cups whole wheat pastry flour
1/2 cup roasted carob powder
1 Tbsp grain coffee
1 tsp sea salt
2 tsp vanilla
1/2 cup safflower oil
2 tsp baking powder
2/3 cups maple syrup
1 1/2 cups Carob Frosting
1/4 to 1/2 tsp oil for pan
Brush the bottom and sides of the 9" cake pan with 1/2 tsp oil, or brush only the sides with 1/4 tsp oil, and set a 9" circle of parchment paper in bottom of baking pan.
In a large bowl, combine and mix flour, sifted carob powder, grain coffee, salt and baking powder.
In a small bowl, combine and mix maple syrup, oil, soy milk, and vanilla.
Stir the wet ingredients into the dry, mixing just until the flour is absorbed and any lumps are disolved.
Pour batter into prepared pan and bake in a preheated oven until a skew inserted into the center comes out clean and the cake pulls away from the sides of the pan.
Time: 30 to 40 minutes at 350 Degrees.
Set on a rack to cool for 30 minutes, then run a knife along the outside and center edges and unmold. Set the cake on the rack to cool completely. Spread on the icing shortly before serving.
Variation: Double Layer Devil's Food Carob Cake:
Double the cake recipie and bake in two 9" pans. Use 2 cups of frosting. Spread about 1/3 of the frosting between layers, another third around the sides, and the remaining on the top.
