Help! Please?

A lot of my favorite non-vegetarian recipes call for marinating the "meat." When I'm using TVP, in order to get as close as possible to the taste of meat, do I rehydrate in the appropriately flavored vegan broth first and then soak in the marinade or do I rehydrate in the marinade? I am new at this and I really want my husband to enjoy his meals so that he doesn't go visit the meat aisle again...ever! How do I approach this? Any help would be greatly appreciated.
