I usually stick it in a stack of plates for a while (30 minutes or so), preferably after blotting it dry and then wrapping it in paper towels. Then after I cut it up I blot the cubes again if they look watery. A few months ago I bought a metal tortilla press and I've been experimenting with putting that on top of a plate during the pressing stage. (This is all with firm or extra firm tofu, by the way).
