Kudzu is used a lot in japanes/macrobiotic cooking -- my current SO has used it for the last 25 yrs, so when we got together, I stopped using flour/cornstarch as thickener, and switched. Now, as soosh indicated, all that we use here is kudzu or agar agar. Can't speak to the nutritive value - but it's quite possible that cornstarch is "bleached" and/or processed in a way that strips it of ANY nutritive value, while kudzu is simply dried & ground - but I can't say for sure.
